I'm afraid I've not personally come across any great story arcs that feature Domino, or Bishop, but  I can tell you that  for Cable,  you should read  Messiah Complex, then his  solo  Cable  series, which ends with the Second Coming crossover, then he returns in the Avengers: X-Sanction arc, followed  by  the series Cable and X-Force, which was relaunched earlier this year  as just X-Force.

For Psylocke, you should read Rick Remender's Uncanny X-Force, which was really good  and kind of  redefined Psylocke. After that, she starred in  Sam  Humphries' Uncanny X-Force, which was not very good, but that is followed by Si Spurrier's current  X-Force series  (that  Cable  is also in), which is pretty great.

For the X-Men  in  general,  you should start with Grant  Morrison's New X-Men, which  jump-started the X-franchise back in 2002. After that run, you should read Joss Whedon's Astonishing  X-Men  run, followed  by the next few years  of Uncanny  X-Men. Ed Brubaker, Matt Fraction, and Kieron  Gillen  wrote the series  one after  the other,  and they were all  pretty good to great  runs.
