Vote for remove evolution, I agree with most of ppl here that gmail-like mails are much better and widely used, plus I believe that if someone really wants a desktop-based mail client he will search for Thunderbird if he is geeky or will just ask about outlook ...
I just hope that the calender won't get removed too, the empathy client, and the new social thingy that let you update your tweeter and stuff like that ...

I'd say that it's not a bad idea to remove evolution. Most people use
web-based mail anyway, and if someone wants to use the client, they
may better install it off the repos themselves.
