I've recently installed edubuntu as our school's distribution.
I think the goal of the edubuntu team is more to consolidate in one
distribution a lot of resources that a classroom teacher can take advantage
of for general educational tasks.
The distribution includes many programs for drill and practice, research
projects, creative projects using multimedia, programs for managing
computer labs, etc.
There are a wealth of resources within the distribution.
While I am sure the fact that it is built on ubuntu makes it useful for
teaching about linux I find its use is that it is a well considered
collection of programs that can be used by classroom teachers - without
them having to do scripting.
