"Sent from Ubuntu" email signature - docs

Hi guys,

"As usual," a controversial change has been made and, despite being past
several freezes, there's still some uncertainty about whether it will be
reverted or not. This release's controversy relates to the setting of a
default email signature for Evolution [1] [2].

Since controversial changes are likely to upset some users, I feel that
it's our responsibility to document ways of opting out of the change if
possible. Unfortunately, I think we're too late to get anything into the
system docs, so I've put a page up on the wiki instead:

Please review and link to it from anywhere you think is suitable.
