We need to choose the time that works for most people, and in
particular most of the core contributors of the team. In this case
we're using the doodle page as a fair way to find out what the most
popular time is, and it's currently looking as though European evening
and US morning is a very good time. We don't have enough availability
in the European early morning.

However, if you can't make the meeting, don't worry - that doesn't
stop you from contributing to Ubuntu documentation. Check out our wiki
page for information and let us know if you have any questions:
