Depends on how big your manuscript would be. If you can write in
"chunks", meaning you can finish your chapters ahead of schedule, you
can open up the document for translation in chapters as well. So,
let's say you get to finish chapter 1 by this month, you can open up
the translation for next month, so on and so forth to the succeeding
chapters. That way, the translators won't have the burden of trying to
finish a translation a few weeks before release.
