We're working on it: https://wiki.ubuntu.com/UbuntuServerTasks
This will provide for simple(r) installations, but doesn't do anything
in terms of simplifying configuration of a machine once installed. The
issue there is the complete and utter suckage of graphical configuration
tools; these are notoriously hard to write well. If someone does it,
more power to them; we'd be happy to include them in Ubuntu Server.
