Ext3 is not going to be replaced as a *default* filesystem any time soon.[1]

For those who want something else, the flexibility of the Ubuntu installer
gives power and server administrators the choice to choose their own
filesystem types.  Advanced users are likely to be aware of the
disadvantages, or advantages, of other filesystems and have a reason for
their selection.

XFS is one of the better filesystems out there, but still (as you say) has
the occasion small issue in actual real-world use.[2]

[1] OTOH, if SABDFL decreed we Ubuntu would now use 'foofs', I can see
people might go along with it, albeit kicking, screaming and crying.
