To clarify: Mucking with your partition table by deleting everything
and making sure that you create the new logical partition at the same
point on the disk is extremely dangerous. Using parted isn't
EXTREMELY dangerous, it's just normal-type dangerous (as any partition
editing is).
And gparted most certainly does know how to resize an extended
partition. I've just done it myself to make sure and it did a fine
job of it.
