Changing Rhythmbox's licence would solve that issue. However it doesn't
solve the issue of other GPL-licenced gstreamer-using applications
though. There may not be any others shipped by default, or even in main,
but it doesn't mean there won't be.
This will rear it's ugly head again if the planned gstreamer-based esd
replacement (for gnome apps going Boing) happens. What if there are core
Gnome apps that are GPL licenced and use GStreamer? Replacing them
wouldn't really be an option.
