UbuntuLite is that project that you are looking for. Install CD is in
progress and even edubuntuLite is in cosideration. I don't think tha
EdubuntuLite would be a hard to do when UbuntuLite will be stable.

One guy from South America is looking for EdubuntuLite to so we could
join forces to bring it to life.
