The change was made by an upstream Gnome developer, who happens to be a
Red Hat employee, while the relevant Canonical Design team member (me)
was on holiday. Restoring appropriate icons to applications is a Gnome
thing more than an Ubuntu thing, though of course Ubuntu developers can
help out.
