I am taking back the fact that you cannot open another instance of an application on Ubuntu 11.04 because I am using a laptop (Alienware m15x) and there is not a 3rd button on a touchpad.

You need to make sure the unity plugin is enabled. Create a shortut to
ccsm on the desktop. Log in to unity to the blank desktop. Click on
the shortcut, go to plugins and uncheck the automatic box and drag the
unity plugin across...
