For those with a "wheel" mouse, or a 3 button mouse, try hitting the middle button (wheel) on an icon and a new window of that application type will open.
So far for me, I've had little time to play with it other than move some icons around and figure out how to get to my installed apps without having to search for it.  Its a little clunky that way.  The one thing that bothers me, and I believe I will eventually get used to it not being there is the toolbar showing all of the active windows (of apps) that I have open.  I know, if there is a dot beside the icon, it is open...if there are 2 dots by the icon then there are 2 instances (etc) of that app running but its just not intuitive for me to look there right now.Here is a good beginners guide to Unity, its very helpful:

I am liking it
Except my Broadcom wireless isn't working. I am ok for now plugging in, hopefully I can find a fix soon.
I work with 2 monitors and I dont like that to make the menu appear i must go all the way to the far left of the left screen and the menu appears on the far left of the right screen.

You can opening multiple instances of a program by right clicking on the icon and clicking open in new window
