I'm afraid I'm not sure about FTP, I still do most of my weddev from my
windows boot, But I believe I can help on the iPods.

YamiPod (www.yamipod.com) is an open source iPod interface that I've
only just recently started using.
To set up your iPod initially, you must still format and upgrade the
firmware through a windows/mac installation of iTunes, but, once that
is is done, you need never touch iTunes again. You can easily do
this on a friends computer if you no longer have a windows boot.
