So for example I think you would want Brasero to open when you insert a
blank CD, instead of the current window that pops up asking what type of
CD you want to burn.

You would want Brasero to open when you write click on a CD or image
file and choose copy or write to disc. Brasero would have to open
directly to the CD copy or image-write mode, and with the CD to copy or
image to write field already filled in.

And you would want Brasero to launch when you select Places->CD/DVD
Creator from Nautilus, or else you want to completely remove that
option.

And ofcourse set Brasero as the default burning application in GNOME.

Personally I think it'd be a shame to lose some of the wonderful
simplicity offerred by nautilus and serpentine. But it's true that
nautilus-cd-burn is a little too simple (no indication of CD size or how
much space you have left as you're adding files) and serpentine has a
couple of major UI bugs that I've reported that aren't being fixed. If
Brasero works better under the hood and is seeing active development
then it seems a good choice. Also the point that Windows converts will
expect something more advanced that nautilus-cd-burn and serpentine is
true, I have seen this first hand many times, and it's a shame that when
left to their own devices they always seem to manage to install some
ancient pre-GNOME X application instead of something sensible like
Brasero or K3b.
