timidity tem gui sim - é só baixar pelo synaptic um pacote extra tiMidity++ (talvez seja universe) e executar o timidity com a opção -ig:     $ timidity -ig

Eu acho que você tem que especificar a saída de som.
Eu uso o timidity http://packages.ubuntu.com/feisty/sound/timidity , ele não
tem nem GUI, mas resolve.
