Normally the audio routing is handled by pulseaudio (which is used by the gnome audio preference).
So after connecting the headset you just have to switch the output (right-click the speaker, and select tab output).

for me it works fine.

For information http://wiki.bluez.org/wiki/HOWTO/AudioDevices is
outdated.
