How can I edit the text of a PDF file without having the source file of it?

You'll need to get the OpenOffice.org 3.0 beta for that extension to work. 
Keep in mind that it's all still a work in progress, so it won't be smooth as 
silk yet.

PDF importing is far from easy, since the format was never designed for it. 
The general way to do things is to use the OpenDocument formats for editing, 
and PDF for exporting.

The approach I'd take is:

1. import your PDF
2. save as an OpenDocument format and edit there
3. when you're done, export to PDF
4. keep the OpenDocument version around for editing in the future
