I've not read into it in detail, but I generally remove the "defaults"
part.

Mounting with atime is an ext3 "default", and I'm not sure if specifying
"noatime" and "defaults" together forces one to override the other.

I've got machines (in the many hundreds) in production without the
"defaults" directive, and there has been no dire consequences.

But otherwise, yes this is where to specify the "noatime" part.
