Ubuntu is seeing it as a modem.

"usb 2-3: configuration #1 chosen from 1 choice" shows that given the
current configuration of the phone and available drivers that is all
ubuntu can use it as.

I don't have any experience with Samsung phones, but Nokia S60 phones
will prompt when connected to a PC what type of connection you want to
use "PC Suite" (Modem), "Mass Storage" (Behave like a USB stick), "Media
Player" (Some proprietary crap that does work) and one other I forget
(photo printer i think).  Maybe break out the owners manual for the
phone and see if can help you change the usb connection profile, then it
might work for you.

Another option is to try using bluetooth if you have a bt dongle
available.

A fallback option might be to use gnokii or something to access the
phone.
