Details on Thunderbird 1.5.0.12 on Feisty;

You can set a default mail server for *each* mail account.

I have a dozen mail accounts and some have their own mail server to send to.

got to Edit -> Accounts, then scroll down on the left panel of accounts to;
Outgoing server, and add the extra mail servers that you need. Set one to be the default.
Then go to each mail account in turn in that left hand panel and set the
"Outgoing Server (SMTP):" to the appropriate new servers your defined.
