To my knowledge we still need a default SMTP account to send mails using 
Thunderbird when we have multiple accounts.
You will get a problem if your SMTP needs a full email address to 
authenticate (before you use it).

In my situation, I use my university's (ISP's at home) SMTP to send 
mails from multiple accounts using Thunderbird. They do not require me 
to use a full email address to use so I have no problem at all.

As for choosing which email address you want to use, no worries at all, 
when you create a new email the "from" bar will will let you choose what 
email address you want to use.
