The change to debian/pdfedit.desktop has been applied upstream, as can
be seen from this Debian changelog entry:

pdfedit (0.4.1-2) unstable; urgency=low

  * Fix file pdfedit.desktop. (Closes: #488896)

The only other significant Ubuntu change was updating the Standards-
Version. For this package, I think we should drop this change for now.
The Standards-Version will probably be bumped in Debian in the next
update. We can also drop the change to the Maintainer field. By doing
this, it allows us to safely sync this package from Debian.
