Resuelto, aparentemente se había interumpido la actualización y quedo
mal el ramdisk de inicio, por lo que no podía leer la partición raiz.

Los pasos para arreglarlo fueron:

1. Bajar Ubuntu Server y hacer un pendrive o cd
http://www.ubuntu.com/download/server/download

2. Bootear con ese pendrive en opciones avanzadas, modo recuperación

3. Elegir la partición, montarla como raiz, y ejecutar en terminal "enjaulada"

sudo update-initramfs -u

Eso actualizó el ramdisk y salió andando.
