Novell does something like this with OpenSUSE: http://susestudio.com/

It strikes me as an interesting project to put together for Ubuntu.
Michael should definitely get an example up and running :-)
Particularly if you could do things like put in your favourite PPAs.
The vast variety of PPAs is a little-heralded strength of Ubuntu.
