/SO/ incorrect.  The client you are using (Thunderbird) is what the
problem is.  Use a client that works correctly and don't have to jump
through hoops.  I hit the reply button to send this and, look, it is
going to the correct place. 
Email clients which are correctly configured make /everything/,
replying, replying to the original sender, replying to all or
forwarding dead easy.
Not at all like Thunderbird, a client that shouldn't be included in
the repos, much less in Ubuntu by default.
