And I had/have that installed.

The problem was the command.

It's not "gst-inspect lame" (at least not in Edgy).  It's
"gst-inspect-0.10 lame".

"locate" is a wonderful thing. :-)

What I'd like to know is, where the heck is all this stuff documented?

There's no man pages that I could find.  And the only documentation on
http://gstreamer.freedesktop.org/ is for developers.
