transcode is good, if you're comfortable with teh command line. If not, try 
dvdrip (a good gui for transcode in teh dvd ripping process). Alternatively 
you could try winkirip or acidrip, both very easy to use, although winkirip 
cannot be installed from teh repositories.

For ordinary video encoding, not dvd ripping, use ffmpeg.
