No, arbitrarily wiping the sender's Reply-To: field will immediately
break useful functionality for Evolution and Mutt users that currently
works.  That doesn't "work for everyone".  It works for people who use
gmail (which is outside Ubuntu's control) and Thunderbird (which Ubuntu
ships, but Ubuntu also ships several MUAs that support list replies.)

Breaking something that works as intended to make it more convenient for
people to use mailers that refuse to support commonly-requested
functionality isn't the best approach.
