Why no mention of GNU?

I agree.

Though, since project members have clearly stated that the name of
the distro is "Ubuntu" rather that "Ubuntu GNU/Linux", probably more
correct would be for it to read:

| "The Ubuntu GNU/Linux distribution is happy to call itself
| an open source project." [snip]
