another thing i just noticed is that your kernel command line arguments
lack the "fixrtc" keyword which makes your clock come up with Jan. 01
1970 instead of the last mount time of the rootfs.

you should add fixrtc to your kernel command line, that date will
definitely cause trouble ... (this must not be related to the mounting,
but things like "snappy versions" will not work due to this)
