Either a file or directory needs to exist in the filesystem for a mount to
succeed; so try creating this directory and re-try?

sudo mkdir -p /snap/viking-gps/1
sudo mount --bind /snap/ubuntu-core/current /snap/viking-gps/1
sudo snap remove viking-gps
