wow, so googling a bit [1] seems to suggest that IPELUAPATH actually
wants patterns o_O (how weird) ... 

try something like:

export IPELUAPATH=$SNAP/share/ipe/7.2.5/lua/*.lua

or:

export IPELUAPATH=$SNAP/share/ipe/7.2.5/lua/?.lua
