Shortly I would first try with an easy remastering of an desktop
system. <br>
Latter on you could try also live-build which starts with a
deboostrapped version and creates it completely from the ground up.
<br>
I would not recommend remastersys or livebackup or other tools. They
tend to do the right thing if you use them correctly but if you
really want to learn something do it the manual way.<br>
