Hi Ian,
Did you [mount and] change directory to the partition of the installed
system?
In my case it was automatically mounted, when I booted from the Lubuntu
install drive. So I did what is illustrated in the attached file.
If the installed system's root partition is not mounted, you must mount
it, for example
sudo mount /dev/sda1 /mnt
and after that change directory and link
cd /mnt
sudo ln -sf /proc/self/mounts etc/mtab
