Could you elaborate? I'm not sure what your selection options look like 
in this case. Anyway, I suppose your problem is a missing file 
association for MS office files and in the selection for applications 
there may be no libreoffice, but there should be something like 
"Other..." where you can select from all applications. There you could 
navigate to the office section and select libreoffice.

Another way to set the selection permanently would be this:

In the file manager go to the directory with the file in question and 
right-click the file. In the context menu select "Properties". It opens 
a new window where you should click the button "File Type Options". 
Again a new window opens where you click the "Add" button. Then select 
libreoffice like I explained in the previous paragraph.

Like Valerie explained already, I would also suggest to use the 
libreoffice version from the Ubuntu repos. If you would install a newer 
version from some other location you wouldn't get updates automatically 
and the missing file association probably would not be there either.
