Dear Mr. Sinclair,

The bug that you have explain is not a kmail bug but unfortunally is an OS bug. We will try to resolve this problem...but you can try to use a stable mod of kubuntu ( 11.10 ). 
Personally kmail never crash in my kubuntu 11.10.

So, we will work about this bug. Thanks for contuct us.

I can only confirm that I have similar behaviour, although I did a great deal of messing around with creating new address books in various ways and now when I type into the 'To' field, everything crashes.
