Wesley said "with kpackage" and Donn said he didn't see a way.  So then 
telling how you do it with a package manager that is neither KPackage, nor 
aptitude, nor even KDE, hardly seems apropos.

To answer the original question:

# sudo aptitude hold openoffice.org-core

should do the job
