The packages are "network-manager" and
"plasma-widget-networkmanagement". Whether you remove them or not is 
up to you. NM will ignore any interface configured in 
/etc/network/interfaces. You may wish to keep NM in case you ever 
need it - and I would certainly keep it until I was sure the 
/etc/network/interfaces setup worked.

Yes, pretty much. Alternatively you can manually "sudo ifdown wlan0" 
and "sudo ifup wlan0".
