Careful what you assume!

I'm not seeing what you're seeing. Oddly enough, I took a look at the 
appearance section. The options I see are: Style; Colors (sic); Icons; 
Fonts; Windows; Splash screen; Emoticons.

No sign of GTK styles and fonts.
