I have similar issues.  I am not sure though that it is related to gtk.  Mine 
freezes when the system is logged in and has nothing running except various 
system tray icons.  No restart X, no TTYs, but mouse moves.  Have to hard 
kill machine to bring back to life.  

I suspect something to do with power management.
