I have exact same problem. Black screen while booting and shutting down and low
resulotion in console mode (I often work in console and are used to
have 1280x1024).
As I understand it it's because vesafb don't work with 64 bit OS and never will.
If I remember right it is fixed in Hardy by using uvesafb
http://dev.gentoo.org/~spock/projects/uvesafb/
instead. It will probebly don't be fixed for Gutsy as so many other things.
