Syncing iTouch

Apple designed the file system on the iPod Touch (and iPhone) so that it can 
only be accessed currently with iTunes.

I won an iTouch at a conference, only to find out that Amarok won't handle it.

The only solution seems to involve iTunes >6.  iTunes 7 & 8 won't run under 
wine or crossover, so I have to run them in an XP vm.

Is anyone doing this with full sync capability, and which vm are you using 
(kvm, vmware, virtualbox, parallels, xen, etc.)?
