With the DVD you have a choice of installs, you can boot the live
session and install from that, or you can choose the text mode install.
Both these will install the same sat of packages and give you the same
desktop. Which you choose depends on your system, the live installer
requires more RAM (any modern PC will be fine) than the text install but
gives you a usable system while you install.
From the boot menu, other than the text install, there are a couple of
other options, eg: server install. You won't want that as the server
install is the same as the desktop install, except no desktop. So it
will be command line only, tho you can install the desktop after.
If you want a standard install, just boot the live session, and click
the install icon on the desktop. That should give you what you want.
