I will often use rsync to back up.  The key feature I use is "--exclude=" so
I can do something like:

rsync -avz --exclude=mnt --exclude=media --exclude=Cache --exclude=cache
--exclude=TextCache --exclude=thumbnails / /mnt/sdb3
