Basically, with kde-desktop you are getting the generic kde environment.

kubuntu-Dektop is the metapackage which sets up Ubuntu's version of KDE, there 
are some kde packages which are not included, and some other packages such as 
Open Office which are included in the kubuntu -desktop.
