k9copy audio

I have some non-commercial DVDs of presentations that I am trying to copy.
k9copy works fine except that the audio is terrible, on some DVDs the
speech is so choppy as to be incomprehensible (some people would say
that I was probably incomprehensible on the original :-) )
There don't seem to be any adjustments to audio quality that I can
see. Does anyone know k9copy does to create the audio track, and how I
could increase the quality (even at the cost of decreased video
quality)? Or is there some other program I should be using?
(I can't just do a DVD-to-DVD copy, because the originals are
dual-layer, and the target disks are single-layer.)
