I personally haven't done that, but this site might help you:
http://www.synce.org

It's down right now, but they have great step by step instructions for
syncing WM2003 machines with Evolution and Kontact. I personally run
Windows XP Home in VMWare and backup to Outlook. It's the only thing I
use the virtual machine for.
