Mount the new partition, say on /mnt/disk (after you made directory /mnt/disk).

Then  ' sudo find / | cpio -pumd /mnt/disk' after which you will have to get grub on the mbr of the new disk or, if you're still booting off the old disk edit /boot/grub/menu.lst to point to your new / partition. You can even add it as an extra entry. that way you have a safety net. ;-)
